Any good spanish restaurants serving local dishes ?

Assuming you mean in CT ?
Everyone’s taste is different, however we like:
La Bohemia and Casa Felix.
In Arricife – some good little tapas cafes dotted about – partcularly liked the ones that are one street back from the front and near the church – walk past teh big hotel on the front and keep walking – you’ll see a church on the LHS of the road and you’ll find them
Others will have their own favourites – tried for Navarro but it was closed for holidays when we were there in Jan 2015.

Unless it has London Tavern or Sunburnt Arms over the entrance most restaurants serve a selection of Spanish dishes. For an authentic feeling try some of the smaller coastal villages such as Arrieta, Orzola, El Golfo and Caleta de Famara. Have to agree with Joe regarding La Bohemia, fantastic food and best steaks on the island (in my opinion).
